Main Dish
Texas Red Chili
Ingredients:
2 lbs ground beef
1 (14.5-ounce) can tomatoes, pureed
2 tablespoons tomato paste
4 to 6 ounces chicken stock or water
1/4 cup red chili powder
2 tablespoons garlic powder
1 onion, chopped fine
1 1/2 teaspoons dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons cumin
4 medium chipotle peppers, ground dry, seeds and all
2 tablespoons corn masa flour
Salt and pepper to taste
2 tablespoons vegetable oil or bacon grease
Directions:
  1. Heat oil or bacon grease in a large pot or dutch oven over medium heat.
  2. Crumble in ground beef, break up any lumps with a wooden spoon and cook, stirring occasionally until meat is browned. Drain off all fat and return meat to pot.
  3. Add remaining ingredients and simmer uncovered for one hour, stirring often to prevent burning. Add chicken stock or water as needed to achieve desired consistency.
  4. Taste and adjust seasoning if necessary.
  5. Simmer uncovered for an additional hour, adding liquid if necessary.
  6. Serve with cheddar or jack cheese and sour cream.

Texas Caviar
Ingredients:
1 1/2 cups chopped, seeded tomato
1/3 cup green onions, thinly sliced
1 tablespoon canned, chopped green chiles
2 tablespoons white vinegar
1 tablespoon minced, seeded jalapeño or serrano chile pepper
1 tablespoon fresh cilantro, chopped
1 teaspoon olive oil
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper
2 garlic cloves, minced
1 can corn
1 can black beans, drained
Fresh cilantro for garnish
Directions:
  1. In a large bowl, combine the tomatoes, green onions, green chiles, vinegar, jalapeño or serrano chile pepper, chopped cilantro, olive oil, salt, cumin, cayenne pepper, garlic, and black beans.
  2. Top with cilantro.
  3. Tastes great with chips or in a burrito with mashed avocado.
